We can use radarson the satellite that can detect the difference between ice and open water, or sometimes the satellites have good enough cameras on them we can get photos back of the polar regions that can tell us lots- e.g. this huge ice shelf twice the size of Greater London collapsing in Antarctica was captured in photos from satellites https://earthobservatory.nasa.gov/Features/WorldOfChange/larsenb.php
